
The Warm Golden Plum Soufflé is selling for US$48 at the Waterside Inn, Bray, England. Michelin three-star chef and owner Michel Roux and his son Alain Small, is using yellow mirabelles, grown mainly in Alsace and considered a delicacy,in their 35-year-old signature recipe. Younger Roux claimed that the baking is crucial, even if it's only one minute off, the taste and texture are altered. It’s served á la minute.
